Lemon Pepper Corn



It's almost over. Summer. This season has some of my favorite food memories and associations, like corn on the cob.  It's a classic.




Who doesn't love unwrapping a foil-covered cob that's fresh off the grill? 

Think about the sweet kernels popping as you sink your teeth into them and the remnants of corn left framing your mouth afterward. Then, there are the tiny bits that get wedged between your teeth, sending you on a search for floss as soon as the cookout has ended. 

What fun! 

I have no grill, so I improvised. 

This white corn was so sweet. I seasoned it with a something salty: lemon pepper. Then, I tossed them on my grill pan for that summer feel.

Breakfast Quesadilla


This is a quickie, but it's a goodie. I''ve been thinking of ways to expand my breakfast repertoire.

I'm on maternity leave now, so I have more time to make a sit down meal. Of course if I woke up even earlier, I would always have time to sit and eat, but let's be realistic.

I need handheld food.

I need things I can heat and eat in the car. I have to get my third grader to school on time and now that we've added the baby's needs to the morning mix, momma has to be creative.

So! This morning I was thinking, how can I get my faves to travel well?

Answer: Quesadilla. It's what's for breakfast.

Cheese holds the contents together. Insert, eggs and whatever else tickles your tastebuds.

For this 8-inch tortilla, I used 2 eggs, one half avocado, a sprinkling of shredded cheddar and 3 heaping tablespoons of salsa.

Baby Love

I'm having a baby. She'll be here soon. And our excitement is growing right along with my belly. 

It's such a miracle. 

The process of creating a new person is really unbelievable. I'm think sometimes,"How does this even make sense?" There is a tiny human living and growing in my womb. She's thriving in a fluid-filled sack and will enter into this world and breathe air. 

I marvel at the development of her anatomy, the lungs and liver, her fingers and toes are all there, by no work of my own hands.

She's been constructed from an accumulation of cells. She is built from a blueprint that's been in place for centuries. I'll never understand why some people doubt God. He's the ultimate designer. 

But I am made in his likeness. We all are! So I did a little designing of my own for my baby. 
A few weeks ago, a neighbor set this old dresser out on the road.

I liked the solid lines. Simple and classic.I figured I could just clean it up and possibly put a changing pad on the top. But then...I got inspired. And this happened
