Mango Yogurt

It started with some mangoes.

Although, sweet and succulent on their own, I had another thought about them.
I wanted to make my own mango yogurt.

Ingredients
1 mango
1 cup plain yogurt
1 tsp honey

I took a mango and peeled and chopped it up. I placed half of the chopped mango in the bottom of my bowl, the other half I tossed in my tiny food processor to turn it into a puree. (if you don't have one, that's fine just keep chopping the mango into tiny pieces)

I added this puree to a cup of plain yogurt with a teaspoon of honey and stirred it up. Then added it to my bowl and topped with homemade granola. Click here for that recipe.

I made granola. You can too!

I'm excited. I made granola. It was easy. #excited

I will do it again.

Trust me, if you try it, you'll probably want to do it again too.

You get to customize yours however you'd like and you get to cut the mystery ingredients that are in the packaged stuff. It's crispy and so fresh, unlike any store bought granola I've ever tried.

Here's how to do it.

Ingredients
1 cup oats
1/2 cup almonds
1/3 cup of coconut flakes
2 tbsp melted butter (note you can use coconut oil or something lighter if you'd like)
1 tbsp light brown sugar

Place your dry ingredients in a bowl and combine (oats, almonds, sugar, flakes) Then pour the melted butter over the mix and combine until everything is moistened. Place on a cookie sheet. Spread the mix out evenly. Bake at 350 for about 10 minutes or until you see the oats darken. Enjoy
