Comfort while waiting


I am READY for spring. And the weather is teasing me so with a few shards of sunlight followed by freezing temperatures, then a peek of sunshine before the rain comes again. Sigh.

It's okay, I know spring will be here very soon and it gives me hope. I'm already in sundresses and sandals (in my mind).

Meanwhile, I'm still cranking out some good ole comfort food to bid farewell to the few frigid days remaining. I had fun with this one. Meatloaf and mashed potatoes. But of course I tried to do something a little different with it. I used both ground turkey and pork, some cheeses and spinach. And it was good.

My 8-year-old looked so disappointed when I served it up. She said "I thought you were making chicken!"

And I was, but that was for another day.

I told her the chicken was for later, so eat your meatloaf. She took a bite and her tune and pouty face quickly changed. "Mommy, this is so good. I want another piece."

Then, she moaned and groaned through dinner. I don't know why she every doubts me.

Shepherd's Pie

Meat and potatoes are always a good combination. Shepherd's pie was one of my absolute favorite dishes as a child. I'd stalk my mother in the kitchen whenever she made one. I remember staring through the foggy glass window of the oven door.
"Is it ready yet?"
"Why can't we eat it now?"
The components are fully cooked when it goes into the oven, so I couldn't understand why she made me wait to dig in. This is a pretty simple meal that will satisfy children and adults. And you can make any combination of meat and vegetable you prefer (or leave the veggies out altogether). I like to make mine with peas. Sometimes, I'll put corn and cheddar cheese in the middle instead. You might try carrots, green beans, or whatever your favorite is.

Ingredients
Mashed Potatoes
Ground Meat of your choice (Chicken, Beef or Turkey)
Peas (or other veggies)
Cheese *optional

1. Make your mashed potatoes (instant or fresh)
2. Cook your meat in a separate pan or skillet until it's done.
3. In a casserole dish layer meat, top with veggies and potatoes.
4. You can top with cheese or layer cheese inside.

Mmmm Meatballs



I've always loved tomatoes and that's no exaggeration. According to my mother, I've been craving them since I was in her womb. So when my friend Gretchen told me about a recipe that requires a hearty helping of diced tomatoes, there was no doubt that I'd try it. Her excited description hinted at the gloriousness, but I had no idea, they'd be so good.

I couldn't remember all of the details/ingredients she told me but I got the gist, and that's usually all I need. These meatballs are moist, flavorful and fabulous. They melt in your mouth. I made some for my cooking club and the women were moaning and shaking their heads.
"Ooooh, these meatballs!"
