This is okra.
It's got a reputation for being slimy.
You've seen it fried, or hanging out in gumbos and soups.
If you ask me, it's been getting a bad rap.
There's another side to this veggie.
But most people won't give it the time of day.
If only they'd slice it into quarter-inch pieces and sautee on high heat in a skillet, they'd see the slime disappears. Yielding firm and flavorful bits of fiber. I tossed almonds, bacon and onions in the pan too. =)
Ingredients
Okra
Bacon (optional)
Sliced Almonds
Salt, Pepper, Garlic
Red Pepper Flakes
*If you're adding bacon, make it in advance and set aside.
1. Cut the okra into quarter-inch pieces. Toss in a skillet on high heat with just a tablespoon of olive oil or butter.
2. You'll see the slim come out then eventually it begins to disappear. Toss in the onions and crumble in the bacon. Stir fry a little longer until the okra are tender and their color gets rich and deeply green.
I'm an okra lover already, so no convincing needed here. This side dish looks delicious. I'm gonna give it a shot, but I plan to leave out the almonds. Does it add a crunch or different flavor?
ReplyDeleteYes, the almonds do add a crunch. The bacon does too, but the okra is actually good all by itself. I just like doing more ;)
