Summer = Mexican food + Margaritas.
It's been a lovely summer. I've enjoyed a few road trips, lots of tacos, and quesadillas, melted cheese and rice & beans. But who can eat Mexican without some essential condiments? Salsa, Pico de Gallo and my favorite (also the fattiest) is guacamole.
Avocados are so cool and creamy. Before the season changes again, I beseech you, make some guacamole.
Ingredients
2 ripe avocados
2 tbsp small diced red onions
1/2 cup of halved cherry tomatoes
2 tbsp chopped cilantro
juice of 1/2 lime
salt
garlic powder
1. In a bowl combine your pitted avocados and mash slightly with a fork.
2. Stir in everything else. Combine, don't turn it into paste, it's good with chunks
