Simple Salad


Every time my mom comes for a visit I find myself revealing some new self discovery or declaring a desired goal. As my mother, she seems to already know exactly what I'm about to say. 

When I told her I think I'm pretty creative. She said, "I know" 
I told her I decided to go back to school and she says "I was wondering when you'd be ready"

Some things are as certain as the sun - like a daughter's desire to constantly impress her own parents and their way of being more proud than impressed by anything you do. 

During Ma's latest trip, I was determined to show her just how much I like cooking and how skilled I was becoming at it. And all she wanted was a Cobb salad. 

"You don't have to keep cooking, let's just have a salad. All I need is some egg and bacon and I'll be straight," she says. 

But Ma! I'm trying to demonstrate my culinary creativity. She gets it, she wants a salad. 
So I made her one and it was the best looking thing I made all weekend. 

Ingredients
Romaine Lettuce
Boiled Eggs
Cucumber
Tomato
Bacon
Shredded Cheddar
Grilled Chicken Breast

1. Cut it all up
2. Plate it

  1. Thanks for posting this. It reminded me of the cobb salad I used to make. I'm going to make it this week but with grilled shrimp and add avocado and green onions. Will let u know how it turns out.
